The Chef's recipe: Roast pumpkin soup with chestnuts, flavoured with Thyme from Provence
Our Chef shares a seasonal recipe full of flavour: roast pumpkin velouté with chestnuts, flavoured with thyme from Provence.
Ingredients (serves 4) :
- 1 pumpkin (800 g)
- 150 g chestnuts
- 1 sweet onion
- 1 garlic clove
- 50 cl chicken or vegetable stock
- 15 cl fresh cream
- PDO Provence olive oil
- Fresh thyme
- Salt & pepper
- Optional extra: a few slivers of roasted hazelnuts and a drizzle of black truffle oil to serve.
Preparation :
- Preheat oven to 180°C
- Wash the pumpkin, cut into quarters (no need to remove the skin) and remove the seeds.
- Place the pieces on a baking tray, drizzle with olive oil, season with salt and pepper and sprinkle with thyme.
- Bake for 25 minutes, until the flesh is tender and lightly caramelised.
- Chop the onion and fry in a pan with a little olive oil, then add the chopped garlic.
- Add the chestnuts and fry for a few minutes to develop their flavour.
- Add the roasted pumpkin, pour in the stock and simmer for 10 minutes.
- Blend finely to obtain a velvety texture
- Add the crème fraîche and season to taste.
- Serve hot in pretty bowls
- Sprinkle with chopped hazelnuts and add a drop of truffle oil for a more festive touch.
